dumpling curry
~4 servings, 25 minutes
sauce
- 1 can coconut milk
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 3 garlic cloves minced
- 3 tbsp red or green curry paste
- 2 tbsp peanut butter
add in
- 2 cups bokchoy chopped (1 large or 2-3 mini heads)
- 1 bag frozen dumplings
rice for a side, chopped green onion garnish
steps
- preheat oven to 450
- start rice for a side
- mince garlic and chop bok choy
- fry garlic and curry paste w/ dash oil. 11 inch oven safe pan
- mix in sauce stuff in pan until cohesive
- max heat, add bok choy and dumplings folded side up
- bake 18 minutes, then overtop broil for 1-2 minutes
- top with green onions, and serve
